The EL Diablo Pork Chop: What is Your Top Chop Recipe?

Shopping List / Ingredients: Serves 2

Two (2) 8 – 10 oz. Pork Chops  (Bone In or Boneless)

3 Tablespoons of Adobo Seasoning

One (1) 14 oz. Tube of Pork Chorizo

One (1) 4.5 oz. Can of Herdez Chipotle Chilies

Equipment: BBQ Grill, Fry Pan, Cooking Spray or Olive Oil


Cooking Steps:  Cook Chorizo Separately

Start a Fry Pan on Medium High Heat. Mix the Pork Chorizo and Chipotle Chilies together in a bowl and pour contents into heated fry pan. Mix the concoction for 10 minutes, or until it appears dark brown and bubbly. Drop heat down to simmer and put a lid on the Chorizo-Chipotle mix.

Step 2: Find your Inner Pig.

Rub your two Pork Chops with Adobo Seasoning, both sides., spay a little cooking spray on the chops before placing on grill. Set your Grill to High HEAT. Make sure to cook your Chops all the way through, with a minimum of 8 minutes at HIGH HEAT per inch of pork meat, total of 16 minutes of cooking time.  Flip and cook both sides of chop*

*USDA’s recent announcement that the key to juicy, tender and flavorful chops is to cook them to the USDA-recommended temperature of 145 degrees F, followed by a three-minute rest. The recently updated recommendation reflects advances in both food safety and nutritional content, as pork is now on average 16 percent leaner than it was 21 years ago.

Step 3: Combine Chorizo with Chops

Bring your Fry Pan of Chorizo-Chipotle over to your grill. Place cooked Chops in Fry Pan and drizzle your Chorizo-Chipotle sauce all over those chops. Turn your grill OFF and allow the Chops to sit in the fry pan with the lid down for at least 3 minutes. Serve Chops with a vegetable side dish and mashed potatoes.
