Zucchini Side Dish

The Zucchini Test: Fruit or Vegetable?

The zucchini or courgette is a summer squash which can reach nearly a meter in length, but which is usually harvested at half that size or less. Along with certain other squashes, it belongs to the species Cucurbita pepo. A Zucchini as seeds, therefore it is a fruit by definition, and however if you ask a culinary professional, they will call it a vegetable. You Decide.

As easy as it looks

This side dish recipe is as easy as it looks. My shopping list has a couple variables in it so have fun with whatever you get at the grocery store:

Zuc-1-

Ingredients: Feeds a family of 4

1- 2 Medium to Large Zucchini’s

1- Stick of Butter, salted and softened

1- Cup of Bread Crumbs

½ Cup of Parmesan Cheese

½ Cup of Bacon Bits (optional)

½ of Milk, Silk Almond Milk or Coconut Milk*

Equipment:

Fry Pan, 1- Large Gallon Size Ziploc Bag, Sharp cutting knife, mixing bowl

Cooking Steps: Slice Zucchini

 

After washing your Zucchini, take a sharp knife and cut “wagon wheel” slices of the Zucchini. Place all slices into a bag of Milk* and allow them to soak for 10 minutes. Next step is to place your dry ingredients, (Bread Crumbs, Parmesan Cheese and Bacon Bits) into a shallow bowl for dipping the Zucchini.

Step 2: Fry Pan

Start a fry pan on Medium heat and place ½ stick of softened butter into the pan and spread evenly. Do not over heat the pan, because the butter will burn and you will have a nasty tasting recipe. Begin the steps of taking the soaked Zucchini into the bowl of breadcrumbs and dipping to make sure the breading is on both sides of the “wagon wheel”.

Step 3:

Place each piece of Zucchini in the pan and raise heat to Med-Hi when the entire pan has Zucchini slices. Allow each side to cook for 7-10 minutes or when the side has a crispy brown crust on it (see picture).

Add butter to pan and repeat the steps until all the Zucchini slices are cooked. Serve warm and enjoy this great vegetable side dish with a big and juicy Rib-Eye Steak.
